Directions:
Quick Soak: Soak 1 lb beans in 6-8 cups of hot water. Bring to boil and cook 2 minutes. Remove from the heat, cover and let stand for 1 hour. Drain water and rinse beans. Cook: Add 6-8 cups of hot water to drained and rinsed beans. Simmer gently with lid tilted until desired tenderness is reached, about 1 ½ to 2 hours.
