LOVE these red peppers!!
My Italian grandmother used to make us scrambled eggs with red peppers. I rehydrate these, add them to a pan with just a little olive oil to cook the peppers a bit, and then add my THRIVE eggs for an easy, delicious breakfast.
I also love to add these to my sandwich before I head off to work: I put a little mayo on my bread, add the peppers and then my lunch meat. By lunchtime, the peppers are rehydrated and add delicious flavor to my boring sandwich...plus I get in more veggies!! : )
